Red Couch Bonding Time

Yes we have a red couch. But I usually don’t utilize much unless I’m sick… You see I’m usually a big blue chair fan for my daily choice of seat πŸ˜‰

Anyways… I got sick. Really sick. It wasn’t fun but can I just say how thankful I am this didn’t hit me last week! Ah. It was already a nightmare couldn’t imagine it mixing with my thesis stuff!

So David made me lots of homemade ginger-cinnamon tea with raw honey. I couldn’t be happier with him as my caretaker! Y’all I haven’t had a stomach flu since my freshman year.

Not fun… I’ll leave all details out no worries πŸ˜‰ I did run a fever with this stuff… No bueno. Anyhow, luckily Monday when I started feeling semi sick I made a Manna run.

I was about to make a big batch of granola again (like last time) and realized I was out of raw honey. So I went to grab some and picked up my normal foods that are jacked with probiotics.

So granola was made… And some gut healing gummies. So glad I made those gummies! Little did I know they would come in handy…

David started some beef broth yesterday in the crockpot, so I’ve been sipping that today too. It has healing power πŸ™‚

Today I have felt better just so weak and sore. Like post horrible CF WOD! But happy to be feeling better, so I got my yoga mat out for some time stretching.

At the end while in Savasana I had the perfect view of my “Give thanks. Psalm 100:4” sign from Heritage House. I’m thankful to be feeling better– so thankful!

Excited to say I won a giveaway over at The Paleo Review and got my prize today! A bottle of Paleo Powder— I’m thawing out a roast tonight to cook tomorrow so it was perfect timing! I’ll let you know all about it πŸ˜‰

Under the Sea

Usually when I find a recipe to try in a magazine, cookbook, etc. I will cut it out/print it/ highlight it and then forget it. Sometimes I will remember the “MUST TRY” recipe and then realize I don’t have the ingredients… enter Pinterest. I have boards concerning food… shocking I know. One specifically is “Under the Sea,” this one is a new one I created just for seafood dishes πŸ™‚ And when ELR posted her Sweet and Spicy Glazed Salmon Sandwiches I knew it would need to be pinned immediately. Not only did I have the ingredients on hand… but it was so easy! And fast πŸ™‚ I only did the salmon… but what I would give to have a pretzel roll (from Edelweiss in town)! Next time I might have to drop in at the German bakery downtown (previously mentioned, Edelweiss) and grab a couple!

I followed her recipe only leaving out one spice– here is what went into this delicious salmon entrΓ©e!

Turn the oven on broil. Take your salmon out and rinse it off. Dry it and place it on a foil lined baking sheet. Rub some sea salt on them (about 1/2 teaspoon on each filet). Now mix your spices.

In the mix- 2 teaspoons brown sugar, heaping 1/2 teaspoon cumin, 2 teaspoons of chili powder, 1/4 teaspoon cayenne pepper. Rub on the salmon! Melt some raw honey and drizzle on top.

It seems like a lot for spices… this was a record for me! I normally do a sprinkle of S & P on my salmon haha so this really rocked my socks πŸ˜‰ Place in the oven (I did the lowest rack) for 5 minutes (I think I could’ve done 3 minutes). This does not taste fishy… ELR mentions that in her post.

To accompany, I did broccoli. Cut, thrown in boiling water for a minute, shocked, and tossed with olive oil/S&P.

Then mushrooms sautΓ©ed in coconut oil… tossed with the broccoli. The veggies were served with a drizzle of balsamic vinegar and a sprinkle of nutritional yeast (for cheesiness).

For crunch, we ate a few blue corn tortilla chips. This salmon was delicious! For a final touch, I added a squeeze of lemon to the entire dish (fish and veggies).

It is spicy but sweet… and so YUMMY!

Happy Thursday! Last night I got in some yoga… MUCH needed. I enjoy it so much!
