Thriving Thursday #4: Overnight Oats

Happy Thursday!

We are having a MUCH better week. Tripp actually had a haircut this week and we went to a fun park afterwards. It was a lot of fun! We also went to Target (at a random time, so NO ONE was there… it was awesome!) because I have wanted to see the new Hearth & Hand stuff and we needed a birthday card ๐Ÿ™‚ Tripp and I both loved the goat bookends, but decided we could wait a little longer on those. Ya know, since we are in the middle of GETTING RID of stuff. Tripp and I have been taking on small spaces (as in a drawer or cabinet) here and there for cleaning out. Fun stuff ๐Ÿ™‚

Single Serving Overnight Oats with Strawberries + Bananaย 

Featuring a couple of Thrive Life groceries

What you need:

  • 1/2 cup oats (I used THESE, quick cooking oats)
  • 1/2 cup whole milk yogurt
  • 1/2 cup almond milk (unsweetened, plain!)
  • 1/4 cup hemp seeds (optional)
  • 1/4 cup Thrive Life strawberries
  • 1/4 cupThrive Life banana slices
  • Pinch of cinnamon
  • Drizzle of nut butter when you are ready to eat!

What you do:

  1. Add all ingredients to a mason jar.
  2. Shake.
  3. Stick in the refrigerater for a few hours or overnight.
  4. Enjoy!

You can also find oats through Thrive Life, but they are not certified GF, so I choose not to use those. If you are searching for certified foods withThrive Life, they have a whole section for you! I usually just select it and pick my groceries from there.

If you want your fruit a little crunchy, just add those before you eat. I like the flavors to melt in (and LOVE that I just grab it and EAT!), so I just throw it all in the jar. Perfect for on-the-go or a quiet breakfast item that doesn’t require any noise (i.e. no risk of waking up a sleeping kiddo). Because I am trying to get up earlier than Tripp (usually an already early riser) and enjoy some #wordbeforeworld and coffee.

The base of overnight oats can be found a lot of places online, but the first place I found it was on Kath Eats Real Food. So I have always followed the 1/2 trio ๐Ÿ™‚

Baked Oatmeal- a perfect gift to give!

Baked oatmeal… one of my favorite breakfast items!! Mainly thanks to my favorite coffee shop (Heritage House!!), it’s usually in the weekly rotation 👩🏻‍🍳

I AIM to pop a batch in the oven either in muffin or pan form each weekend. Perfect for snack or a quick breakfast (in hopes we can make it ON TIME to church ha!).

Before everyone got up this AM, I popped these in the oven!


As I was baking them, I thought about how these are perfect to gift your neighbor at Christmas or even a new mama! Who doesn’t love a breakfast that’s already done, right??

Now these aren’t under the “paleo” umbrella since oats are grains. I waited a while before introducing any type of grain with Tripp and I still don’t like to rely on oatmeal for breakfast. Honestly, there are so many different things to try! But if you find yourself with an oatmeal lover… be sure to pack all the nutrition possible in. Not sure when we don’t try to make the most of each meal?!? Ha #mamalife

Our top 3 toppings:

1. Nut butter (usually sunflower or a jazzed up almond like THIS!)
2. Almond yogurt (I get the Kite Hill brand at Publix) for some probiotics
3. Grassfed collagen (find some HERE)

Our fruit is usually baked in the oatmeal, but if I forget, we throw some Thrive Life berries on top and dig in.
