What I ate Wednesday: Β Birthday Edition Β 

Hey y’all! What a special day I have had. The Lord has blessed me with so many amazing people in my life. To me, the cool thing about a birthday is that you get to hear from them on this special day. I love that!! Makes my heart just plain happy. 

So breakfast… a special gluten free blueberry muffin from the famous Mason Dixon Bakery. And cold brew + almond milk. 


I got to work and had special office decor and surprises… talk about the works! They went for it with all of my favorite things. 


Lunch… Jason’s deli for the office lunch party (I mean meeting…). Gluten free California club with that delicious cookie. 


Snack was a chai tea latte with almond milk (thanks to Tripp’s Miss Carolyn!) and an RxBar. 


Nothing like a steak dinner + La Croix (a whole case thanks to Uncle Rob!) to end the day thanks to David πŸ™‚ 


And desssrt… a “flight” of gluten free cupcakes from Mason Dixon (thanks to David for this surprise!!). Plus the most amazing vanilla ice cream. No corners cut for this golden birthday. I didn’t know about this whole golden thing until recently. Only turn 29 on the 29th once πŸ˜‰ 


What a full heart I have going into this next year πŸ™‚ 

And to keep with the birthday theme… I wanted to do something special! I have 3 Beautycounter products that I want to gift to 3 people! The next 3 orders placed using THIS link before midnight tomorrow night (3/30) will get a full size product from me. As I get the order confirmations, I’ll personally email you and give you the product list to choose from and get it in the mail. That easy!! 


Talk about a good time to dip your toe into safer products πŸ™‚ 

Thanks for making my birthday SO special!! Tripp did his share and got us matching shirts from the Lady and Little shop on Etsy. 

And he was almost still for a picture lol! I plan to wear my Live Simply this weekend and will be sure to snap a picture of us πŸ™‚ Ha!

Menu + Meal Idea–> Monday 2/20

Happy Monday, y’all! I almost forgot about sharing our gameplan for the week. Once again, we had a good selection of proteins in the freezer, so I planned around that. 


Prepped food:

  • Ground beef with salt, pepper, turmeric, oregano, onion, garlic powder, and cumin. 
  • Grilled steak
  • Jasmine rice cooked in broth
  • Pressure cooker potato salad 
  • Pumpkin oatmeal breakfast cookies
  • Pumpkin snack bars
  • Chopped celery and carrots

I also have some salad greens, a bag of green beans to sautΓ©, and a bag of cauliflower rice. I plan on browning a pack of sausage and making some meatballs out of ground turkey or chicken midweek. I’ll also roast sweet potatoes in some ghee and salt/pepper. 

Basically when I have the chance to prep this much, I kind of toss the idea of a menu and go more with “choose a meat and a couple of sides” and eat! 

Meal idea(s)… let’s talk breakfast. You probably noticed the pumpkin breakfast cookies. I pretty much modified this recipe to fit what I had on hand. It’s like baked oatmeal in cookie form! And what about a snack? I did these pumpkin bars (but added molasses for some nutrients!) for a snack… Tripp approved! I serve mine with chocolate chips for a fun sweet treat πŸ™‚ 


And lastly,  I have so many recipes in this cookbook to try. And honestly this potato salad was tagged but more for that first summer cookout. Well it was so beautiful Sunday, I decided why wait for summer?!? A mix of Primal Kitchen mayo and mustard and celery… a pinch of paprika… and you’re looking at a fun side. It really did spruce up my lunch today!

And something about pressure cooking just makes you feel like Iron Chef worthy πŸ™‚ Ha.
