My Favorite Kale Salad

Happy Thursday!!

I told y’all things were turning green around here 😉 Isn’t that kale green beautiful? I typically cook those leaves down after cooking a big batch of bacon. BUT when it starts getting a tiny bit warm, I like serving them massaged and tossed with some lemon. It is so easy!

Easy Kale Salad

What you need:

  • 1 big bunch of kale
  • 2 lemons or use concentrate (measure out the equivalent!)
  • ~3 to 4 tablespoons of high quality olive oil
  • Salt/Pepper

What you do:

  1. Strip the kale from the stem. You can save the stems for your next batch of broth or feed to your animals 🙂
  2. Wash the kale really well! Dirt will hide all in those curls.
  3. Either chop the leaves up with a knife OR tear the leaves into bite-size pieces. Toss in a large bowl.
  4. Add your lemon, olive oil, and salt/pepper. Now MASSAGE it into the kale. That is right… massage it in.

Serve it with your eggs in the morning… with grilled chicken and roasted potatoes for lunch (apple on the side is a nice touch)… or solo as a side salad. Or however you want! It is really tasty. I have been making a big bowl at the beginning of the week and just using it throughout the week. A nice way to get some greens in. The lemon just makes it all better… it actually helps it start to break down, making it easier to digest.

Thriving Thursday #5: Smoothie Time

Good morning!! And happy THURSDAY!

#1 Yes, we are still rocking the Christmas jams. I mean how cute are those gingerbread ninjas? I totally had my fingers crossed that Hanna Andersson would come out with some adult versions of that one, but no luck.

#2 My boys know these cherries are my all time favorite. So they tend to stay towards the back of the cabinet, in my stash. Ha. So breaking these cherries out for the smoothie was a treat (haha… don’t act like y’all don’t selectively stash things in the depths of your cabinets!!). This is my attempt at a “festive” smoothie… you know, Valentine’s Day is coming up quickly.

#3 Lastly, HAPPY THRIVING THURSDAY! Whether you are a current Thriver or sitting there wondering what I am talking about, you can totally make this smoothie. I took a few shortcuts with the Thrive fruit, but you can make this with fresh fruit too. Remember Thrive is just freeze-dried foods. I use my monthly grocery box to fill in the gaps between growing seasons, feed someone that likes broccoli one day and hates it the next, and with an overall to goal reduce our waste! Single Serving Cherry- Berry Smoothie 

Featuring a couple of Thrive Life groceries

What you need:

  • 1 cup almond milk (if you buy it, unsweetened, plain!)
  • 1/2 cup cherries
  • 2 or 3 strawberries
  • 1 banana
  • 4 cubes of ice
  • 2 tablespoons of collagen peptides (this is the brand we are currently using)
  • 1 teaspoon honey-sweetened elderberry syrup

What you do:

  1. Add all ingredients to a blender.
  2. Blend.
  3. Enjoy!

Now a cool variation would be a chocolate-cherry smoothie 🙂 If you try that, report back!!

Also, I am really trying to work on using my camera. The phone is so easy, but it really is fun to play around with the camera. Tripp LOVES the big camera. Which is so funny. Like he insisted on holding on the cherries. Then he had Leo also hold the can of cherries… sweetness.

This is a fun way to get in elderberry for immune support too. And I think we are all wanting immune boosters in every form possible, am I right?
