Blue Monster

David and I had a date night that included going to the movie theater. We hardly ever go, so this was a special treat. How special? Here is what accompanied our special movie date to see Mission Impossible: coke, cookie dough bites, and popcorn. Yeah… we both decided as we walked out that all that seemed like a fun idea while we ate it then the later it got the worse we felt haha! But hey it was worth the splurge! So to recover… a green smoothie, packed with vitamins, protein, minerals, and all other good things in smoothie form πŸ™‚ Now I have heard about the Green Monster… thanks to the Oh She Glows blog. She has so many delicious recipes… Even basic ones to ease you into drinking them! Check her out!

Blue Monster
-2 cups of spinach
-2 tablespoons of raw oats
-1 cup almond milk
-1 cup of frozen blueberries (plus a little- 160 grams)
-1/4 teaspoon spirulina (Optional- found here. Small amount goes far, trust me!)
-2 eggs*
-2 to 3 ice cubes
-Splash of water**

*If eggs weird you out, just be sure to get in some sort of protein or you will have that “I think I swallowed a rock” feeling in your stomach. I was out of protein powder and had to improvise with eggs and oats πŸ™‚
**Give it a spin in the blender and if you want it thinner, add the splash.

All it all in the blender… throwing your spinach in last. Pour it in a fancy glass and garnish with a strawberry!

Drink up! I promise you will have no idea you have spinach in there πŸ™‚
So this weekend via pictures. How about it?

Friday night– Gymnastics Meet (front row view thanks to Mr. and Mrs. Ballard!).

And they beat Georgia! Roll tide πŸ˜‰

Saturday morning– Breakfast date at Heritage House accompanied by new books.

Saturday afternoon– Time in the kitchen cooking scallops. Turned into a wonderful supper!

Drizzled with a touch of Apple Balsamic.

Saturday evening– Date night at the movie theater. Mission: Impossible- Ghost Protocol
Sunday morning– Sunday school with my favorite bunch of girls! Planning another trip to a gymnastics meet πŸ™‚ They have grown way too much in a year!!

Sunday lunch– Leftovers for lunch then a CrossFit WOD and yoga (ahhh… a wonderful class!)
Sunday afternoonMade almond milk and dried fruit and nut bites (recipe here then I tweaked it, post coming later) rolled in chia seeds. Think Larabars but you make them!

David made some awesome soup (veggie soup with chicken) Sunday evening, but we both ate it so fast that I didn’t get to take pictures. Haha– it happens πŸ™‚

What a weekend… and the cool thing… we have today off too! So technically I have one day left in the weekend. Woohoo! I have 3 things on my list for today… other than that I will enjoy lunch with a friend, hit the gym for CrossFit, and then a run. Speaking of running- Leanne and I will take a run at a race coming up in February! Another half marathon πŸ™‚

Have a wonderful (non-manic) Monday,
Courtney

Book Review: The Help

As many of you remember, I read The Help this summer. I mentioned it a while back (okay a month) and I totally forgot about sharing my thoughts on it.

This book was wonderful! I highly recommend it and so happy I chose it to read as my one and only leisure book for the summer (okay year… seriously, you have no freedom to just pick up a book in grad school)!

Side note… I love hard back books. NO dust cover, just that “old-vintage” book look. And especially in different colors. This particular shade of mustard yellow is just gorgeous. And it pairs well with the “southern charm” talked about in the book. Yellow was just the color to decorate with back then… did y’all know that Nate Berkus had a big part in the movie? Yep, he had a show all about it and had many of the actresses on there. It was an awesome show… here is the link!

I would love to type out a full discussion about my thoughts on the book, but I really want you to read it! If you have seen the movie, I have heard it matches the book very nicely. Any thoughts? I hope to get to a show before they stop showing it at the theater! The book is well written… it flows well without jumping around so much that you just want to stop reading. Most chapters are written from a character’s point of view and as the chapters change the point of view changes. But like I said it flows well…. it doesn’t lose you, it sucks you in and leaves you wanting more. When I would see that the chapter was ending and another character was narrating next I would almost always be left in suspense! Then I would be sucked into another story and before I knew it I was left in suspense again πŸ™‚ I slowed down the reading speed towards the end because of other readers telling me how when it ends you will be sad so slow down and enjoy the read! That I did and I was so happy… I was happy with the ending. I personally felt like she ended it in a way that there could be another book in the making… I am crossing my fingers!

First day of teaching went great! Thanks for all the thoughts and happy vibes sent my way! I ended up wearing some skinny jeans rolled up with the most comfortable Loft top ever! I left the top untucked and just let it be flowy…. and my $11 shoes (pictured above) from the Loft that were regular $80!! Told you they had killer sales πŸ™‚ Now back to studying for comprehensive exams and wishing I had an Icee for my sore throat— this virus/cold thing HAS to leave me! It keeps coming back!!!

Have a great night… rockin’ recipe coming up tomorrow just thought I would warn ya!

Stay well,
Courtney
