Before the menu chatter– I have been wanting to share this spaghetti sauce I threw together last week. It has been a multi-use sauce that I have served for paleo spaghetti, mixed with chicken or beef for a chili like entrée, or used as a dipping sauce. And since I created it all by myself, AKA, I wrote down measurements instead of throwing things in a pot, I was pumped 🙂
*All diced very small!*
1/2 yellow squash
1 cup of roasted potatoes (white and sweet, I roasted these earlier in the week)– adds thickness
14.5 ounce can of roasted diced tomatoes
8 ounce can of tomato sauce
2 teaspoons Italian seasoning
2 teaspoons garlic powder
1 teaspoon dried basil (or fresh)
1/2 teaspoon oregano
1/4 teaspoon red pepper flakes
Sea salt and pepper
How to: Throw all the veggies in a warm (medium heat) pot that has your fat of choice (I used pork lard, ordered a high quality from US Wellness Meats). Sauté until soft and add the tomato products and spices. Simmer for roughly 20 minutes. Cool and pour into a blender to give it a good whir or use a handheld immersion blender to give it a nice blend right in the pot.
Use/serve however you need!
