Menu for the week of February 17

The menu this week came together pretty fast. We really stocked up on some great items at the market on Saturday which pretty much made picking what to cook easy and exciting! David and I had an all day date on Saturday… and it all started at the market that morning :)


We then had breakfast at Another Broken Egg Cafe…


So good! Then headed off for a Crossfit Mobility clinic. David fixed us some chicken salads after that then we continued our date. He had planned on going for a wine tasting (it was a surprise!) :)


It was so much fun… we bought a couple of bottles then went next door to eat at our favorite place in Tuscaloosa, Epiphany. Even got to open one of the bottles of wine we bought!


David had a beet and goat cheese salad and then their tenderloin plate. I had a cauliflower souffle and their salmon plate. SO GOOD! Then we treated ourself to dessert and (for me) coffee :)


Just a perfect day! I love all day dates… almost feels like you are on vacation or something. Very cool!

I kept all my choices gluten free and as primal as I could. We wanted to enjoy ourselves enjoying someone else’s cooking haha (it was nice!)! Although, we did get carrot cake for dessert, so that, I am sure had gluten, but I just had a little bit to avoid any stomach issues. It was fantastic… best carrot cake I have ever had.

Now back to our kitchen :) Here is the menu.

Weekly Menu

  • Sunday
    B’fast: Omelette (by David) with bacon and an apple
    Lunch: Gluten-free “pizza” topped with local/gluten-free sausage and some greens
    Dinner: Practical Paleo‘s beef and butternut cocoa chili
    (I doubled it and used stew meat instead, so it is closer to a beef stew but with a chili base)
  • Monday
    B’fast: Multiply Delicious Paleo Apple Pie “Oatmeal” (similar recipe here) from her new e-cookbook (Paleo Recipes for Every Day)
    Lunch: Chili leftovers
    Dinner: Meatballs with marinara and veggies
  • Tuesday
    B’fast: Egg muffins or paleo oatmeal
    Lunch: Meatball salad
    Dinner: Chili leftovers
  • Wednesday
    B’fast: Egg muffins or smoothie
    Lunch: Chili leftovers
    Dinner: Practical Paleo’s Pesto Shrimp and Squash Fettuccine
  • Thursday
    B’fast: Egg muffins
    Lunch: Shrimp Fettuccine leftovers
    Dinner: Meatball salad or salmon
  • Friday, Saturday, and Sunday:
    Out of town… I will have to keep my choices all gluten free, which isn’t hard! Keeping safe/gluten-free with eggs, fruit, veggies, and basic proteins (chicken, beef, etc.). It isn’t that hard, especially with whole foods (and all things cooked in butter or olive oil). I can make a meal for anytime of the day with any combo of fruit, veggie, salad greens, and eggs :) I will probably bring some things to have on hand in case I get hungry in the car though (tuna, beef jerky, nuts, fruit, veggies, etc.).

Should be a great week of food and then a great weekend full of family :) For now, I am back to thesis work and counting down the hours to eat this wonderful smelling chili that is in the crockpot.


I will share our entire Valentine’s Day dinner menu as soon as I can. It was just perfect and I totally surprised David :)


Get your menu planned for the week… and get something cooked tonight so you can leftovers tomorrow night. Makes Monday night so easy and something to look forward to!
