Single Serving Green Chili Pepper Soup with Chicken

What you need:
- 1/2 cup chopped chicken
- 1/4 cup green chili peppers
- 1/4 cup chopped kale
- 1 tablespoon chopped onions
- 1 1/2 cups chicken broth (depending on how soup-like you want it!)
- Garlic powder
- Onion powder
- Cilantro (love the TL herbs!)
- Avocado (for garnish)
What you do:
- Throw ingredients into a bowl or jar (chicken through onions + spices).
- Bring your broth to a boil (or 2 minutes in the microwave works for me!). Then pour over your soup mixture and stir.
- Cover and let it stand for roughly 5 minutes.
- Serve with avocado and cilantro.
Once I got some basics in stock from Thrive Life, I started sprinkling them in for added fruit (perfect for snacks on the go!) and/or veggie (almost snackable!) power. Not only are these high quality, but they are convenient! Want something green in that soup or casserole? Pop open the kale– sprinkle it in. That is it… it is chopped and ready. What I also love is that I can still do my grocery store trips (love me some grocery shopping… yes, for real!), but have these on hand to fill in for anything that isn’t in season around here (or on sale…) or that I only need once or twice a week. Because things like peaches aren’t in season right now, but I kind of like to have them around to munch on once and a while. Even after opening the can of TL foods, you have A YEAR to enjoy. A YEAR… there’s no way you can waste these foods.
You see, we humans, we waste A LOT. Last year I really tried to be more aware of this and minimize our waste. Now we are not afraid of leftovers (and cooking enough to last more than one meal), but I was getting bad about letting things linger in the fridge (saving it for that ONE dish… or just overbuying at the store) too long. I would pull out the broccoli to finally roast it and realize it had mildew. I would throw away ORGANIC broccoli that I paid too much for (facepalm… and ouch to the budget). Not only has Thrive Life foods helped me cut down my grocery budget but it has helped cut down our waste tremendously.
This year I want to try and grow more of our foods. My sister and her family (check her out here) are pros at this and really inspired us to try it out. We took care of their homestead last summer when we moved here while they traveled and it was so fun! I think a garden (and some chickens… and goats!) will help me feel more settled here… but that whole SETTLED word is another post for another day 🙂

They need a little moisture to be refreshed (they are freeze dried not dehydrated learn more here), but you can sub chicken that you cook or your own chopped veggies 😉 That is the cool thing and takes the pressure off of Thrive Life foods… if chicken is on sale one week at the store, buy it! Your opened TL chicken will be there and ready when you need it!
