What I ate Wednesday + Pizza Talk

Wow, it is Wednesday! Woohoo 🙂 I hope you all had a fabulous day. If you didn’t check out the special Tripp post yesterday, check it out (HERE). Hint, there is a GIVEAWAY 😉

So I am going to show you all what we have been eating this week.

Breakfast– eggs + fruit; and baked oatmeal from Heritage House. I figure I am only in town for roughly one more week, so better enjoy all the favorites that are special to Tuscaloosa. This morning I actually got to sit down to enjoy breakfast outside. David and Tripp were hanging out this morning, so I headed to work earlier than normal and soaked in that breakfast. IT just felt amazing outside! Cool breeze in June, I will take it anytime!

Lunch has been leftovers mostly, but today Tripp and I took off on a stroll across campus to go to our favorite place, Zoe’s! I ate this consistently throughout pregnancy and clearly Tripp loves the place too. We both enjoyed chicken, roasted veggies, and potato salad. And olives. It just hit me today that Tripp clearly loves Kalamata olives because I LOVED them when I was pregnant. And I have ever since!

Dinner– GREEN CHEF box rocked this time. David and I both agree it is a splurge when we do order one, but it always gives us new flavor combos that either I don’t have around here, I don’t think of combining, OR just don’t want to buy the ingredients to have for one dish. The shrimp one below needed a grill pan, but I just used my skillet. Turned out great. I love the sauces and spices they use! Green Chef also was one of the “Paleo Magazine favorites” in their latest issue! I can see why, their paleo box has been a hit for us.

Oh the pizza!! So here’s the thing… I told David and Tripp to puree the cauliflower. You are supposed to rice it #whoops. So I ended up adding flax seed meal, cassava flour, and a little salt. Then dipped/pressed the “dough” into little cookie-size shapes. Baked these on 400 for about 15 minutes, flipped, baked for a little longer. Then topped them with red sauce, chicken, avocado (not pictured), olives, and sweet potatoes. Tripp loved them and we did too!

I could see this also being the perfect “vehicle” for a meatball “sandwich.” I might try that next 🙂

Ohhhhh, my mother-in-law got me a subscription to Paleo By Maileo. I get a box full of paleo snacks each month. IT IS SO AWESOME!!!
