Happy Monday, y’all! Menus lately have been heavily based on our CSA boxes from the beautiful Belle Meadow Farm — and I’m not complaining. We have been getting peppers, butternut squash, okra, eggplant, and usually some potatoes. As the weather cools off, I know the veggies will change, so trying to use up every bit of what we get each Tuesday.
I’ve been throwing together some of the same things each week, but with a change in spices to just change it up a big. Here’s what we have been doing:
Soup with the peppers– here’s my favorite pumpkin chili recipe. I just chop my peppers and use them in place of the canned ones.
Pot roast with the potatoes. I throw my beef roast in the instant pot and sprinkle with salt and pepper. Then crush some garlic gloves and pour in some broth. Then top it off with chopped potatoes, carrots, and onions. Ready in 8 hours 🙂
Roasted butternut squash and okra. I usually cube and toss the squash in coconut oil, salt, and cinnamon. Tripp really likes it cooked it that way and I do too! Same with the okra but sans the cinnamon… Although, maybe I should try that! I roasted on 400 degrees — okra needs about 12-15 minutes and burner it squash about 20 minutes. Roughly. This will be different for every oven.
Eggplant. I struggle with eggplant. Not only does my body not react well to it, but I just don’t love the taste. Well Belle Meadow has changed that (well the taste department– I still can’t eat it all day everyday). I cut it length wise into what could become lasagna pasta sheets then drizzle with avocado oil and sprinkle with salt, pepper, and Italian seasoning. I roast those until tender and then layer it with freshly sliced mozzarella, ground beef, and a drizzle of marinara sauce. So good! I can enjoy this once a week without a problem.
So this week’s line up:
- Steak and spinach salad with roasted sweet potato wedges and olive oil-lime dressing
- Beef and rice bowls with chopped peppers, spinach, and avocado
- Pot roast
- Butternut squash lasagna
- Chicken kabob family meal from Zoe’s (I’m pretty sure that’ll happen ha!)
Roasted sweet potatoes and broccoli will also be throw in as a side… And for Tripp to munch on. Currently his favorite things to eat and give to Leo are– steak, liver pate, butternut squash, sweet potato, broccoli, ghee, apples, and avocado. Now he’s not eating all of this at once, but I try to have 2 or 3 of the above at dinner time on his plate to explore 🙂
