September Menu #4

I hope y’all had a great weekend and ending this Monday with a tasty meal 🙂

This weekend I was at “the farm” visiting my parents. I had a great time and my sister even came out to visit. If you follow me on Instagram (@cookinuplife), you saw a glimpse into the fun!

Menu
Monday
L- Tuna-olive salad over spinach
D- Pork meatballs, butternut squash, and avocado salad

Tuesday
L- Tuna-avocado salad with spinach and plantain chips
D- Roasted veggies (broccoli, radishes, okra, & sweet potatoes) and meatballs

Wednesday
L- Roasted veggie salad with beef
D- Beef, salsa, avocado, plantains, and grapes

Thursday
L- Taco beef stuffed in a sweet potato
D- Beef, onions, peppers, rice, avocado, and salsa

Friday
L- Chicken breast, sweet potato, and spinach
D- Spaghetti pie bake (from PaleOMG) with “garlic” bread (using this recipe for dinner rolls but baked it in a loaf pan with herbs on top!)

Breakfast Options Egg muffins with peppers and carrots; fruit, coconut milk, and eggs

September Menu #3

Hi!! I hope you all have had a good weekend 🙂 I’ve actually been under the weather this weekend, so this meant drinking lots of broth and using my essential oils. Healing powers in both and along with lots of rest, I’m already feeling better tonight 🙂

Yes… You’re going to notice that I have beef tongue on the menu. It’s just like shredded beef! But way better. Here’s a great recipe if you ever find yourself with a beef tongue. And if you’re interested in some of the “weird” superfoods, don’t forget to check out the newest book from Multiply Delicious!

Monday
L- Taco salad
D- Shredded beef (tongue), avocado, carrot salad with a buttered up sweet potato

Tuesday
L- Beef burrito bowl
D- Shredded beef, carrots, rice, and avocado

Wednesday
L- Beef, rice, avocado, and carrots (leftovers from dinner!)
D- Stuffed baked potato with shredded pork
Thursday
L- Shredded pork “taco” salad (shredded carrots, lime juice, olive oil, and sweet potatoes)
D- Leftover shredded beef with pear salad and baked sweet potato

L- Leftover stuffed potato
D- Leftover chicken on a pear salad with bacon and broccoli

Breakfast for the week:
Paleo Banana Bread (here’s a good recipe!) with eggs and fruit
