Happy Monday y’all! I am sorry I am just posting a weekly menu… I have actually been a bit under the weather! Today I am finally feeling better, yah 🙂

As for making 2 gallons of chicken broth last weekend… let’s just say I was SO thankful for that stuff this past week and weekend. I felt a cold coming on starting around Tuesday/Wednesday, so I was sure to incorporate lots of broth. Speaking of, I am sipping a cup now 🙂
So the menu…
Weekly Menu for August 25th-30th
Breakfast options: Multiply Delicious Banana Muffins; Eggs with bacon and roasted butternut squash plus kraut; smoothie with Great Lakes Gelatin, blueberries, banana, avocado, and coconut oil; boiled eggs with grapefruit and “bulletproof” coffee (Choffy with a little coffee blended with gelatin and ghee and spices)
Snack options: PaleOMG chocolate cookies with sunbutter, call it a paleo oreo if you will; sardines
Dinner- Salmon with “kitchen sink” salad (pictured for tomorrow’s lunch!)
Dinner- Turkey meat roll ups with bell pepper, spinach, and carrots. Dipped in salsa! Served with some roasted sweet potato fries (similar to these– Nom Nom Paleo fries)
Lunch- Baked chicken with broccoli and sweet potato fries
Dinner- Homemade chicken soup (I didn’t write down the recipe, but here is a great one to follow from Against All Grain)
Dinner- Chicken soup… 🙂 For the record, I could have this every meal!
Lunch- Canned tuna salad with salad (mixed the tuna with avocado and added some dill pickle kraut, so good!)
Lunch- Turkey meat roll-ups with a salad
Dinner- Hamburgers with baked sweet potato and wilted kale
