August… Week 3 Menu

Happy Monday y’all! I am sorry I am just posting a weekly menu… I have actually been a bit under the weather! Today I am finally feeling better, yah 🙂

Hey, I wanted to reminded everyone that is new to this lifestyle that you can find food resource links and all sorts of tips in this post– Stokes Paleo 2.0 🙂 Check it out and let me know (comment below) with any sort of questions or just thoughts. Always excited when I see a comment pop up, I know that is silly. But I love hearing from you all!

As for making 2 gallons of chicken broth last weekend…  let’s just say I was SO thankful for that stuff this past week and weekend. I felt a cold coming on starting around Tuesday/Wednesday, so I was sure to incorporate lots of broth. Speaking of, I am sipping a cup now 🙂

So the menu…

Weekly Menu for August 25th-30th

Breakfast options: Multiply Delicious Banana Muffins; Eggs with bacon and roasted butternut squash plus kraut; smoothie with Great Lakes Gelatin, blueberries, banana, avocado, and coconut oil; boiled eggs with grapefruit and “bulletproof” coffee (Choffy with a little coffee blended with gelatin and ghee and spices)

Snack options: PaleOMG chocolate cookies with sunbutter, call it a paleo oreo if you will; sardines

Monday

Lunch- Shredded (leftover roast) beef salad with berries, avocado, pumpkin seeds, and loads of greens.

Dinner- Salmon with “kitchen sink” salad (pictured for tomorrow’s lunch!)

Tuesday

Lunch- Kitchen sink salad with apples, carrots, celery, greens, tahini sauce, avocado, Kerrygold cheese, and Boar’s Head All Natural roasted turkey meat (great back-up to have in the fridge!)

Dinner- Turkey meat roll ups with bell pepper, spinach, and carrots. Dipped in salsa! Served with some roasted sweet potato fries (similar to these– Nom Nom Paleo fries)

Wednesday

Lunch- Baked chicken with broccoli and sweet potato fries

Dinner- Homemade chicken soup (I didn’t write down the recipe, but here is a great one to follow from Against All Grain)

Thursday

Lunch- Chicken thighs (pulled these out to not use in the soup) with rice, asparagus, and wilted greens

Dinner- Chicken soup… 🙂 For the record, I could have this every meal!

Friday

Lunch- Canned tuna salad with salad (mixed the tuna with avocado and added some dill pickle kraut, so good!)

Dinner- Chicken soup again… it made a ton and hey, it is so tasty!

Saturday

Lunch- Turkey meat roll-ups with a salad

Dinner- Hamburgers with baked sweet potato and wilted kale

Leo turned ONE and Weekly Menu

Happy Sunday everyone!

I hope you all have had a wonderful weekend. This past week we not only celebrated our 2nd wedding anniversary, but we also celebrated Leo turning 1! Here are some pictures I took with his “birthday meal.”

As for this week, school resumes at The University of Alabama (where I work), so I am trying to keep the meal plan simple. I do this by thinking of big items to cook that will feed us 3 or 4 meals each. And getting a few batches of bone broth in the freezer for quick soups– the gut-healing properties of broth is awesome. And it boosts your immune system, which is crucial this time of year 🙂

So what about the mean plan? Here is it! Remember I am posting a menu with last week’s photos so you guys can have a visual of at least a meal per day 🙂

Weekly Menu for August 18th-23rd

Monday

Lunch: Peach salad with chicken, roasted potatoes, and carrots drizzled with lemon and Kasandrinos Extra Virgin Olive Oil

Dinner: Spaghetti squash with meat sauce (browned beef plus tomato sauce and Italian seasoning)

**Save rest of spaghetti squash and meat sauce for tomorrow night’s spaghetti pie)

Tuesday

Lunch: Chicken, sweet potato (do an extra for tonight’s dinner!), and salad

Dinner: PaleOMG’s Spaghetti Pie with leftover sides from lunch

Wednesday

Lunch: Leftover spaghetti pie served on a big salad

Dinner: One pot chicken with rice

**Sear some chicken breast in coconut oil, pour some (about a cup) broth or white wine in, add chopped veggies (carrots, zucchini, & broccoli), then turn the heat to medium and let it all braise for 20 minutes or so. While that is braising, cook organic white rice.

Thursday

Lunch: Spaghetti pie leftovers with salad

Dinner: Seared salmon seasoned with Pink Paleo Powder served with sautéed zucchini/squash/greens, sweet potato, and a peach.

Lunch: Leftover braised chicken and veggies

Dinner: Taco salads 2nd anniversary style (salad greens, Paleo Powder seasoned beef, white lime rice, salsa, and guacamole)
