June Menu #1

I have missed y’all! And meal planning too 🙂 I’m back at it now and can’t wait to share the first menu of… June (wha?!?).

June Menu #1
Breakfast: Muffins from The Paleo Kitchen (turned their pancake batter into a muffin one!), with Bulletproof coffee (with gelatin, cinnamon, turmeric). Or eggs with sautéed greens and roasted veggies.
L- Chicken Thighs with kale, bok choy, carrots, and turnips
D- Zoodles with meatballs from The Paleo Kitchen
L- Leftover meatballs with zoodles
D- Chicken thighs with brussel sprouts, carrots, & greens
L- Tuna Caesar Salad (using Steve’s Paleo Chef sauce)
D- 4 Layer Beef and Bacon Casserole from The Paleo Kitchen
L- Casserole leftovers
D- Meatball leftovers
L- Casserole leftovers
D- Tuna salad with rice and leftover roasted veggies

David and I have been busy on the weekends doing some DIY projects and things around the house. We will celebrate 1 year of home ownership this week. 365 days in this place!


We did paint the door blue. It took me a long time to decide but happy I did! We also have a chalkboard wall in the kitchen. It’s green! Probably will go black after summer. The color is great for now though!

Leo loves it 😉


I know I’ll sleep fabulous tonight because we finally had a solid meal prep day. It feels great!

Also I’ve been dabbling in essential oils, I love them so far! Any tips? I’ve been rubbing our feet with lavender each night and peppermint if our head or neck is hurting. Lavender is fabulous for bug bites too… Goodness knows I keep at least one this time a year!
