So this was my best attempt at “spicing” up (in the most cost friendly way) what was left in the freezer. I threw in a couple of turkey and egg dishes to break up the grassfed beef marathon, but you’ll see I’m using a lot of ground beef this week 🙂

Here’s the caveboy casserole…
I used adobo spice instead of taco seasoning, used half a can of diced tomatoes instead of fresh, only used 1 green bell peppers, no olives or green chilies, and added carrots. Still turned out delicious 🙂 A new favorite around here!
The eggs from the market blew me away Saturday– I’ve started getting the eggs from Sara Ann’s booth and they’re outstanding. Also got smoked mozzarella from AA Farm Creamery and my weekly grassfed beef from Oakhill Angus Farm.
Have a wonderful Monday and I hope you guys have some tasty menu items for the week planned! If not, steal one of mine 😉
