Cleaning out the Freezer Menu

So this was my best attempt at “spicing” up (in the most cost friendly way) what was left in the freezer. I threw in a couple of turkey and egg dishes to break up the grassfed beef marathon, but you’ll see I’m using a lot of ground beef this week πŸ™‚

Weekly Menu

Breakfast– David’s granola with fruit and almond milk; omelet
Snacks- Paleo Parents no-oatmeal cookies; strawberry coconut gummies used the Grassfed Girl’s recipe); applesauce topped with granola

Sunday
L- Elk stew (David knocked this out of the park and I have no idea what the recipe is!)
D- Our Paleo Life’s Caveman Casserole with chips, salsa, and avocado
Monday
L- Stew leftovers OR turkey salads
D- Caveman Casserole leftovers
Tuesday
L- Turkey salads
D- Taco salads with roasted sweet potatoes and peppers
Wednesday
L- Taco salad leftovers
D- Primal Cravings’ Lasagna with kale salad
Thursday
L- Lasagna leftovers
D- “Brinner”
Friday
L- Spiced Beef and roasted veggie salad
D- Paleo pizza night!
Saturday
L- Chicken salads loaded with leftover veggies
D- Multiply Delicious’ Tuna-Bacon Cakes with salad and sweet potatoes

Here’s the caveboy casserole…

I used adobo spice instead of taco seasoning, used half a can of diced tomatoes instead of fresh, only used 1 green bell peppers, no olives or green chilies, and added carrots. Still turned out delicious πŸ™‚ A new favorite around here!

I also baked The Paleo Parents’ N’Oatmeal Cookies.

I subbed walnuts for pecans and added cacao nibs.

Delicious and chewy and just plain good. Never know they don’t have any maple syrup or honey… Or coconut sugar. Only sweetened with fruit!

The gummies are so good too… A favorite post WOD snack or just a daily snack. Gelatin is an awesome addition to anyone’s lifestyle. It has tons of benefits… Taste/texture wise, just like jello!

David’s elk stew was so yummy– elk, carrots, onions, celery, and potatoes. And who knows on the spices… It was good and I didn’t ask any questions πŸ™‚

The eggs from the market blew me away Saturday– I’ve started getting the eggs from Sara Ann’s booth and they’re outstanding. Also got smoked mozzarella from AA Farm Creamery and my weekly grassfed beef from Oakhill Angus Farm.

Leo has my spot all warm for me so I’m hopping in bed!

    I made the N’Oatmeal cookies last night! They are awesome! I am going to try the Caveman casserole. Also, what type of pizza do you make each week?

      The casserole rocks as much as the cookies!! For the pizza, I usually use a basic crust recipe from Primal Palate then use whatever toppings I have left from the week πŸ˜‰
