Sunday Roast

As I’m working on the meal plan for the week, I thought I would go ahead and share tonight’s dinner that’s cooking away as I type 😉

That’s PaleOMG’s Mushroom Gravy Slow Cooked Rump Roast. Never had it before and it caught my eye when searching for rump roast recipes. I’ll report back and let y’all know how good it is.

This weekend has been great. I’m all well and happy to have survived a very mild version of the flu– I’m feeling good and extra good about the way I was able to treat my sickness 🙂

Walks with Leo and David in the sunshine are the best way to recover. I plan on starting back Crossfit tomorrow but will be sure to take it lighter than normal and continue to let my body make a full recovery.

I won 2 boxes of fettuccine then 1 box each of gnocchi and lasagna sheets.

And some slice, bake, and eat cookie dough (The Primal Palate’s special recipe!). For the record, I typically don’t have luck with giveaways. Guess I’ll start entering them now! Ha 😉

So last night David and I turned our house into an Italian restaurant (music included!). Why not go all out when you have paleo friendly pasta 🙂

Even had local smoked mozzarella to top it all off. The mozz wasn’t even 24 hours old yet… Talk about amazing! AA Farm Creamery can show you what mozzarella (and all cheeses) should taste like– go see Aric at the Tuscaloosa River Market. I think I’ll go have more mozz now. 🙂

Along with our favorite (and wallet friendly) organic red wine we enjoyed a couple of cookies. It’s so convenient to have slice and bake on hand– all of their items are freezer friendly too. The pasta dish was just amazing– we made a quick red meat sauce to top the fettuccine pasta. When you see the high quality product… You’ll know why they have to charge. It’s an art to make this type of gfree pasta and time consuming. As of now, the rest of the pasta will go in the freezer to enjoy throughout the year. Can’t wait!
