We have had such a wonderful Sunday y’all. Full of waffles, laughs, and rest. Of course some cleaning/laundry and cooking too 😉
But we did squeeze in a walk downtown… Post yard work. It felt great outside! A restful day was perfect to top off a full week! Oh I even got to partner up with David for our Saturday team WOD… This past week of WODs were tough. Everyone is doing so good at Crossfit Candor!
I do want to share a couple of recipes I tried out this weekend. Both were winners y’all… And I’m not surprised. I mean I got them from Heather at Multiply Delicious and George at Civilized Caveman Cooking 😉
Waffles… I used Multiply Delicious Apple Coconut Waffle recipe but subbed a peach (for the apple) and coconut sugar (for the honey). We didn’t have maple syrup so we used farm fresh butter and preserves 😉
This weekend we also had Civilized Caveman’s Simple Short Ribs.
I didn’t have curry powder or chili pepper– so I used chipotle chili pepper. Also instead of red wine vinegar, I used red wine. I had some nice organic wine leftover. Exactly half a cup so it worked! I’m sure the curry would add a whole new flavor– I’m buying some at the store this week!
We served the short ribs with pan sautéed potatoes for dinner. Then I threw the leftovers and the “gravy” in with some wilted greens today. It made a nice short rib stew… That was cozy in a bowl y’all!
And we even got a third meal out of this crockpot winner… We saved the veggies to top our burgers tonight! Served also with sweet potato chips (first time frying them– been into plantains lately though!), arugula, chipotle paleo mayo, avocado, and kraut. Yummy! It has been a delicious weekend. And Bama won– roll tide!

Okay so we better hop to the meal plan… Being back in the swing of Crossfit again has left me really appreciating these meal plans y’all. If you’re new to planning… Pick a couple of days to plan to get the feel of it 🙂 You can do it… No matter how busy! I promise– I’ll be cheering ya on the whole way. And don’t forget– I’ve been posting my paleo meals since about January. So dig around the blog to find inspiration and links to “Cookin’ Up Life” approved meals!
It is such a happy feeling to get a WOD in at 5:30am and know that dinner is planned for that evening. Whew 😉 About 2-3 days a week I’ll be doing 5:30am– really liking it. Around 11am you forget you’ve even worked out already 😉

B- Paleo granola (using recipe from Primal Cravings) and peach with an egg
L- Leftover burger with arugula, roasted cauliflower, and roasted radishes
D- Salmon with roasted sweet potatoes and okra
B- Granola, frozen raspberries, and bacon
L- Turkey or roast beef roll ups with avocado-arugula salad
D- Tex Mex Meatza from Health Bent
B- Eggs and bacon with frozen fruit
L- Leftover meatza with salad
D- Salmon with veggies
*Put roast on to cook overnight.
B- Eggs and bacon with sweet potatoes
L- Roast with celery, carrots, and potatoes
D- Chicken and waffles
B- Leftover chicken and waffles
L- Roast leftovers
D- Chicken salads
B- Smoothie or Blueberry Breakfast Cookies by the Paleo Parents
L- Sandwich meat roll ups with salads or tuna salad
D- Grilled everything haha… Burgers/chicken/veggies
