Menu Planning After Sunset

Before the menu chatter– I have been wanting to share this spaghetti sauce I threw together last week. It has been a multi-use sauce that I have served for paleo spaghetti, mixed with chicken or beef for a chili like entrรฉe, or used as a dipping sauce. And since I created it all by myself, AKA, I wrote down measurements instead of throwing things in a pot, I was pumped ๐Ÿ™‚

Paleo Red Sauce (paleo and organic)

You need:
*All diced very small!*
1/2 onion
1/2 yellow squash
1 zucchini
1 cup of roasted potatoes (white and sweet, I roasted these earlier in the week)– adds thickness
14.5 ounce can of roasted diced tomatoes
8 ounce can of tomato sauce
2 teaspoons Italian seasoning
2 teaspoons garlic powder
1 teaspoon dried basil (or fresh)
1/2 teaspoon oregano
1/4 teaspoon red pepper flakes
Sea salt and pepper

How to: Throw all the veggies in a warm (medium heat) pot that has your fat of choice (I used pork lard, ordered a high quality from US Wellness Meats). Sautรฉ until soft and add the tomato products and spices. Simmer for roughly 20 minutes. Cool and pour into a blender to give it a good whir or use a handheld immersion blender to give it a nice blend right in the pot.

Use/serve however you need!

So while that cooked I roasted some veggies… sweet potato and spaghetti squash.

I used the spaghetti squash to have paleo spaghetti for dinner ๐Ÿ™‚

A whole lot of veggies… and good protein!

Let’s get down to business– I have been working very hard (and enjoying these Mac Attack paleo treats!!) on the thesis today and honestly just ran out of “staring at the computer screen” energy to post it earlier. Can’t complain though because I am almost finished ๐Ÿ™‚ ๐Ÿ™‚

Weekly Menu

  • Monday
    B- Eggs and “grits” with frozen berries
    L- Roast beef salads
    D- Leftover shrimp and grits
    *Thaw out salmon and buy more eggs
  • Tuesday
    B- Paleo breakfast chili with fried egg and avocado (made this before here in the ol’ crockpot)
    L- Roast beef salads
    D- Salmon with veggies
  • Wednesday
    B- Eggs, bacon, and kraut
    L- Tuna salad
    D- Leftover chili
    *Thaw out beef for taco salad
  • Thursday (GO TO farmer’s market on campus- inspiration for the weekend!)
    B- Leftover chili
    L- Tuna salad
    D- Taco salad

  • Weekend
    Breakfast options- Leftover pancakes, omelette (with market goodies!)
    Lunch options- Taco salad, turkey salad, or roast beef roll ups with kraut
    Dinner options- Pizza (thinking one should go down this weekend!), fish tacos (maybe, we still have some fish frozen from David’s bachelor trip!), OR Multiply Delicious Slow Cooker Chicken, Sweet Potato, and Kale Stew (made here and was outstanding!).
  • Snack options: Roast beef with Farmhouse kraut, apple with cheese and nuts, almonds with coconut flakes, banana with sun butter, applesauce and veggies, sweet potato with nut butter, PaleOMG’s paleo “granola,” OR smoothies.

My goodness I am excited about this week!! So much GOOD food— and guess what I will do tomorrow?? I will post a giveaway AND give a final recap of PaleoFX ๐Ÿ™‚

The paleo shrimp and grits– holy yum! Also treated myself to a Crispin cider (my first Crispin).

Served with bacon– the “grits” are made of… cauliflower, stock, and almond meal. They taste EXACTLY like grits y’all– no kidding around there.

David and I had such a great weekend– attended our first marriage conference and we had a blast. Getting to know new couples and learning more about L-O-V-E ๐Ÿ™‚

We had a great dinner and even took a walk (reminded us of Austin, a river walk!).

Also this weekend– we had some chill time at Barnes and Noble. Meaning, we bought some new cookbooks and magazines ๐Ÿ™‚

Did y’all enjoy that rain today? Man it sounded so peaceful this morning. Looks like we have another chance this week… better keep the gear out and ready!
