Early to Plan

I will post a recap of the weekend soon– but wanted to post the menu earlier than normal 🙂


  • Sunday
    Brunch– Almond Paleo Pancakes
    (Snacked between church, working out, and house work)
    Dinner–Taco salads with Cauliflower tortillas… Last Sunday dinner with Jaclyn before she graduates! *PREP: Roast sweet potatoes and butternut squash*
  • Monday
    B- Huevos Racheros with leftover tortillas and salsa/avocado (Make ahead: Egg Bake Casserole)
    L- Leftover taco salads
    D- Balsamic and rosemary chicken with kale, asparagus, and roasted beet salad
  • Tuesday
    B- Egg bake
    L- Tuna salad or leftover chicken
    D- Tri-tip roast (crockpot) with roasted veggie salad
  • Wednesday
    B- Smoothies
    L- Salad with egg bake and bacon
    D- Tri-tip leftovers
    *Lay out pork chops
  • Thursday
    B- Egg bake
    L- Leftover tri-tip
    D- Pork chops with apricot and apple (crockpot) from Paleo Comfort Foods
  • Friday
    B- Smoothies or leftover egg bake casserole
    L- Leftover pork chops
    D- **Hopefully a celebratory dinner post thesis defense!!
  • The Weekend
    B- Paleo no oatmeal or sweet potato hash
    L- Salads with leftover protein
    D- Salmon with veggies
  • Snacks
    EPIC bars, green apple with nut butter, boiled egg with avocado, nuts with dried fruit, gut healing gummies

We will be out of town for some of the weekend so I will be making some portable options to have on hand 🙂
