Hey!! David and I are still traveling back from Austin… PaleoFX rocked our worlds! We have already agreed this might just be a yearly trip 🙂
I will post all about the conference throughout the week… And all the COOL people I met. I’ll be dropping names like nobody’s business haha… Seriously I was speechless many times meeting some of the people that have made my lifestyle change fun and tasty!
Since we won’t arrive until after the grocery stores close… We will be posting our menu tomorrow. Expect a Monday Menu (like this week, another optional menu!) post 😉 But I thought I would share another menu in case you need inspiration tonight…. Menu Throwback. Look forward to hopping back into the kitchen and whipping up some tasty meals.
Austin left us very inspired… Food and life in general 🙂 I just have a big smile on my face just thinking about this whole weekend… I did have a birthday (thanks for all the bday love!!) and David just blew me away with celebrations all weekend long. First one post finding out I needed to avoid gluten with a 10 foot pole (haha seriously I didn’t have one tummy ache from gluten and I can’t say how happy that makes me!). We had the perfect place to stay over the weekend with some family– much better than a hotel! I told David we are making the trip back to AL with full tummies, brains, and hearts 😉

Thankfully my friend from Texas told me I couldn’t pick them… Just in time!

And we weren’t the only ones pulling over… So many families were taking Easter pictures! Great idea!

I hear (thanks cousin Anna!) these are called Indian Paintbrush. I mean I’ve always loved Texas but Austin had the “wow” factor. And the drive in through these small towns and BIG ranches was perfect. Ok I’ll stop… I love Alabama too don’t worry 😉
Hope you’ve got a fun week of food planned… One of my favorite quotes from the conference was “wake up and say I can eat whatever I want” by Everyday Paleo’s Sarah Fragoso. Nice way to think about it 🙂 Don’t think restrictions… Think “holy moly I have SO many options!!” We are blessed here in America with so many options… Make them for your lifestyle! She has a new cookbook coming out soon she demoed a recipe from… Paleo Around the World Italian Cuisine 🙂
