That’s right… I did not use butter in the cookies I made over the weekend! What a rainy weekend we had…

Luckily I had all the ingredients except a few minor ones… I ran out of vanilla extract. And I didn’t have coconut extract. But all in all I used her wonderful recipe exactly as it appeared on her blog!
First I assembled the troops…
Then baked for about 8 minutes on 325 degrees. Quick cooking… Amazing! Since they have a coconut oil base, which hardens when it’s cold, be sure to serve them warm/room temp not out of the fridge! They are so good- David gave them the stamp of “best cookies ever” and I couldn’t agree more!
In other news… I started back to work at my ol’ stomping grounds on campus… My boss is the best. She is staying on top of me and my thesis writing and welcomed me back with an Icee! Very happy to be back over there working 😉
And Crossfit has been kicking my toosh this week… Shocking I know! That’s why I love it… It’s different and never the same. I worked on my hand stand push ups on Sunday and made some big improvements! The WODs have been challenging this week and have really pushed me! Happy about that!
Speaking of happy stuff… My very best friend graduates from law school tomorrow. I couldn’t be happier 🙂 I’m very excited to get to attend her graduation (and reception before). Funny I remember coming to the campus 3 years ago and she pointed out where the graduation reception would be… Look at her now giving me directions to come to her very own graduation!!
Hope today has been great… Thursday, right?
