Egg-e Situation

When it’s Thursday it means…

…a ride by the Farmer’s Market is a must (perk to still being on campus!). I bought strawberry jam, okra, rainbow chard, heirloom tomatoes, cheese, and that beautiful sunflower 🙂 Oh and eggs… Of course!

A dozen farm fresh eggs mean…

…egg muffins must be made 🙂 I found an easy recipe over at Nom Nom Paleo and I can’t wait to try more and try some new variations! Here is the recipe– all I changed was adding some water!
Cheesy Egg Muffins (from Nom Nom Paleo)
You need:
-4 eggs
-2 tablespoons of Greek yogurt (she said full fat so I did that!)
-3 tablespoons of coconut flour
-1/4 teaspoon baking powder
-1/2 cup of shredded cheese
-Sea salt
-1/4 cup water (I had to add that to get it to the right consistency)

Pour the batter in silicone cups (thank goodness for these bad boys!!) and bake on 375 degrees for 20 minutes.

Delicious and super easy 🙂

And that… That was so good! I had a tough day and the cupcake fairy didn’t even know 🙂 Thanks Jamie, the cupcake was the best I’ve ever had!!

Butterless Cookies

That’s right… I did not use butter in the cookies I made over the weekend! What a rainy weekend we had…

But then the rainbow came…

And the sun came out 🙂

Blue skies! So the plants are recovering from ALL the rain… A little much for them but they’ll be begging for that in a month when it’s 100+ degrees out!

I’ve been visiting the market on Thursday’s when I can… Scored some farm fresh eggs. Can’t tell you how excited I was to see the egg lady!

My mom came into town Friday (geez I’m doing that backwards story story… I’ll get back to the cookie recipe ASAP!) evening for a special dinner for Mother’s Day… I treated her to Epiphany!

We had food hahah but we also tried some dark chocolate espresso mousse cake… Wow! Topped off with this…

So fresh and strong! I love strong black coffee. So then I came home and had this… Double shot of sleepy time tea…

And while sipping that I ran across the movie Leap Year and a cookie recipe…

Luckily I had all the ingredients except a few minor ones… I ran out of vanilla extract. And I didn’t have coconut extract. But all in all I used her wonderful recipe exactly as it appeared on her blog!
First I assembled the troops…

Mixed the sugars and melted coconut oil– let that mixture sit a bit.

Then combined that mixture with the flour and egg (everything but the chocolate chips and coconut) mixture.

Using my hands I combined the dark chocolate chips and shredded coconut with the dough.

Then baked for about 8 minutes on 325 degrees. Quick cooking… Amazing! Since they have a coconut oil base, which hardens when it’s cold, be sure to serve them warm/room temp not out of the fridge! They are so good- David gave them the stamp of “best cookies ever” and I couldn’t agree more!

In other news… I started back to work at my ol’ stomping grounds on campus… My boss is the best. She is staying on top of me and my thesis writing and welcomed me back with an Icee! Very happy to be back over there working 😉
And Crossfit has been kicking my toosh this week… Shocking I know! That’s why I love it… It’s different and never the same. I worked on my hand stand push ups on Sunday and made some big improvements! The WODs have been challenging this week and have really pushed me! Happy about that!
Speaking of happy stuff… My very best friend graduates from law school tomorrow. I couldn’t be happier 🙂 I’m very excited to get to attend her graduation (and reception before). Funny I remember coming to the campus 3 years ago and she pointed out where the graduation reception would be… Look at her now giving me directions to come to her very own graduation!!

Hope today has been great… Thursday, right?
