Mouth watering yet? Well mine was when I saw this on Oh She Glows. The minute I saw it I was in love. It was one of those recipes that you immediately check to see if you have everything to make it then anything you are missing you run to the store (Oh, no one else does that??) Haha. I was only missing 2 things… so needless to say I sprinted to the store and gathered the troops to make Butternut Squash Mac ‘n Cheeze.
Really? 40 cents is valuable?? Come one VitaSpelt pasta step it up! Anyhow, it is 40 cents. Since my butternut squash was already roasted I got to skip over that step. So I started with boiling the pasta. I then made the cheese sauce! I used butter, almond milk, corn starch, garlic powder, nutritional yeast (gives it a cheese flavor), Dijon mustard, and salt/pepper. I scraped out the roasted butternut squash and blended it with the sauce in the Warrior (yes, the Ninja now has his side kick in the kitchen… it is the food processor and immersion blender made by the Ninja company!). I then combined it all together… so creamy. So delicious! I wanted to eat the sauce by itself. Seriously.
But then I added it to the pasta and tasted it and it totally rocked my socks! I served it with turkey, turnips, and greens 😉 Then I put it in my darling little pumpkin to just be all “fall fairy” on y’all.
Now I must go because I have this in the oven… a deep dish pizza… swoon!
